Cranberry -Orange Bread! ( as requested).

1 3/4 c. whole wheat flour
1/4 c. wheat germ
2 T. soy flour
3/4 c. brown sugar
1 1/2 t. baking powder
1/2 t. baking soda
2 T. melted margarine, slightly cooled
 Grated rind and juice of 1 orange plus water or more orange juice to make 3/4 c.
1 egg beaten
1c. cranberries cut in half
 1/4 c. almonds optional

 Preheat oven to 350degrees. In a large bowl, blend dry ingredients. Mix in margarine, orange juice, and egg. Fold in cranberries. Pour into well greased 9 x 5 x 3 inch loaf pan. Bake 45 to 60 minutes or until top springs back when touched lightly and bread pulls away slightly from sides of pan. Cool about 10 min. before removing from pan. Cool on wire rack. ( Bread is better the second day). Makes one loaf.

 I changed some ingredients. I used dry cranberries and used some bran in place of the wheat germ.  It was a lovely bread and tasted great with a little butter. I also used a different pan.
